Nuts…what can I say?  They are a great ‪protein source and they pair perfectly with ‪salads, ‪desserts and ‪‎beer!  All you need for this recipe is one egg white, two tsp vanilla extract, 3 1/2 cups pecans, 3/4 cup dark brown sugar, one tbsp cinnamon, 1/2 tsp powdered ginger, 1/4 tsp salt and a pinch each of cayenne pepper and cloves. Mix the dry ingredients and set aside. Froth the egg white in a bowl, combine wet ingredients with the dry mixture, mix well and coat pecans. Place nuts on a non stick baking sheet and bake for 30 min at 325 degrees Fahrenheit, mixing nuts every 10 minutes.  Once baking time is complete, remove pecans from the baking sheet and allow for them to cool. Once pecans are completely cool, sample your finished product and serve on a cute candy dish. If you can manage not to eat them all, store the remaining pecans in an airtight container, like a mason jar. The ‪candied pecans make a great party snack as well as great gifts. If you would like more kick to your pecans, rather than adding a pinch, add 1/2 tsp of cayenne pepper. Experiment with the spices to your liking.  I plan to add more sugar and cayenne to my pecans next time!

  •          1 egg white
  •          2 tsp vanilla extract
  •           3 ½ cups pecans
  •           ¾ cup dark brown sugar
  •           1 tbsp cinnamon
  •           ½ tsp powdered ginger
  •           ¼ tsp salt
  •           Pinch cayenne pepper
  •           Pinch cloves
  •           2 medium mixing bowls
  •           1 non stick baking sheet or pan
  •           Plate to cool pecans
  •           Optional: candy dish or mason jars
